Chia seed pudding… if you have been with me for a while, you know that there is no chia seed recipe on this blog. Whereas chia seed pudding is a very popular choice for a healthy snack, breakfast, or even dessert, its gelatinous texture, which is usually achieved by soaking them in water or milk, just always felt a little bit too much for me. Fear not with this Apple Cinnamon Chia Seed Pudding, though. I have found the perfect mixture ratios so that this one feels more like overnight oats than chia seed pudding and is therefore simply delicious. It is also easily prepped, super high in protein and fiber, thus, keeping you full for hours.

Basic Concept of Chia Seeds
Chia seeds are simple and nutritious. They form a gelatinous texture by soaking up 10-12 times of their normal weight. This weight increase through soaking up liquid perfectly highlights their fiber content. If they did not contain so much fiber, they would not be able to absorb 12 times their weight in liquid. When they are soaked, they form a gel- or pudding-like texture. However, for some people the “gel” effect is too much, which is the reason, why this Apple Cinnamon Chia Seed Pudding is nothing like it.

Why Chia Seeds Are Good For You
As said above, chia seeds are super nutritious and a very simple ingredient to add to your diet. They have become very popular in the health world, mainly due to their soluble fiber benefits. I have written about this so many times, but the benefits of fiber are really incredible, and partially, I feel from a scientific standpoint, we are still scratching the surface with regard to all its benefits. Fiber helps your digestion, moving everything along nicely, eliminating toxins, and at the same time, making you feel full for longer. In addition, chia seeds are packed with protein, antioxidants, and are high in ALA omega-3 fatty acids. The combination of fiber and omega-3 fatty acids may be particularly beneficial for your heart health. They are also rich in magnesium, calcium, and iron. All from a tiny seed! Isn’t nature incredible?!

Easy Swaps and Questions
Can I use ground chia seeds, or do they need to be whole? You could also ground the chia seeds, but since they taste more like oats in this recipe because we are adding a lot of yogurt and other ingredients, I personally do not think this is necessary and would likely skip this step.
What kind of milk can I use for this pudding? I used cow’s milk, but oat milk, almond milk, or coconut milk should also work fine. You could even add water if you do not have any milk in the house.
How long should my chia seed pudding soak? The soaking time is key to receiving the perfect consistency. As a minimum, I would say 2 hours, but really, between 6-8 hours overnight is best. This recipe makes two servings (as I like to have some for both days of the week. Once they are soaked they can be eated at any time and should keep in the fridge in an airtight container for up to 3 days.
