Oh my god, these Chocolate Covered Peanut Dates are an absolute dream come true! I made these on a whim the other night for a snack for going to the cinema and I am OBSESSED. These are so easy to make, absolutely delicious, goey, chewy, hit the sweet spot, and divine. You will not be disappointed by these little gems!

The list of ingredients could also not be easier. You only need medjool dates, crunchy peanut butter, chestnut or coconut flour, chocolate, peanuts, and salt. The longest period of time will be spent on letting them come together and cool… exercise patience, it is worth the wait 😉.

Dates are the fruit from the date palm tree. They grow in a lot of tropical regions around the world, and are sold all over the West nowadays. Dates are chewy and naturally sweet. Dates mainly contain flavonoids, carotenoids, and phenolic acid. Flavonoids have been shown to reduce inflammation, and may also reduce the risk of diabetes, Alzheimer’s disease, and certain types of cancer. Carotenoids have been shown to reduce the risk of certain eye diseases. Anti-inflammatory phenolic acid may also aid in lowering your risk of heart disease and cancer.

Fiber, in general, is so important for our bodies and a much needed addition to it. Generally, most people do not eat enough fiber (found largely in vegetables, fruit, and whole grains). Dates are an excellent source of fiber and help with regular bowel movements, and easier elimination. Fiber has also been shown to help with controlling blood sugar levels. Fiber slows down digestion which means that a lot more of the nutrients can be processed slowly, and that also applies to glucose. Last but not least, dates may be beneficial for your brain health. We now know that there is a strong correlation between inflammation in the body and the body’s brain health. Higher inflammation may cause a higher risk for, e.g. Alzheimer’s and neurodegenerative diseases. Date’s anti-inflammatory properties may counter-act, and thereby support brain health.

This recipe is gluten-free, vegetarian, vegan, and dairy-free. Due to peanuts being legumes, they are not suitable for the paleo lifestyle. Sometimes peanuts are also classified as nuts, which would also make this recipe not nut-free.

These gooey, chocolatey, and peanutty, and delicious Chocolate Covered Peanut Dates are absolutely divine and such an easy treat. ENJOY!

Ingredients

  • 8 8 medjool dates

  • 2 tbsp 2 crunchy, runny peanut butter

  • 1 tbsp 1 chestnut or coconut flour

  • 70 gr. 70 dark chocolate

  • Peanuts and sea salt for sprinkling on top

How to

  • Start by pitting the dates. In a small bowl, mix the runny peanut butter and chestnut or coconut flour (if the peanut butter is not runny or less runny, use less flour). Fill the dates with the peanutmixture, put on some parchment paper and put into the freezer for ca. 30 minutes or so
  • Once cooled, melt the chocolate over a hot water bath. Cover each of the dates in chocolate and sprinkle some salt and peanuts on top. Put back into the freezer for 30 minutes or so. You can transfer them to the fridge afterwards. Eat and ENJOY!
