What Are Lemon Buttermilk Overnight Oats?

For anyone who does not know, overnight oats are a cold, usually overnight, refrigerated dish. It is done by combining rolled oats with lemon zest and juice, as well as buttermilk. We are also adding Greek yogurt, a touch of sweetener of choice, as well as some yummy and delicious toppings on top.

Why Are These Lemon Buttermilk Overnight Oats good for you?

Let’s give oats the moment in the spotlight that they deserve! Oats are some of the healthiest whole grains on the planet. They are naturally gluten-free and contain a lot of minerals, such as phosphorus, magnesium, copper, manganese, iron, and zinc. They also contain quite a bit of protein, as well as fiber, which is so beneficial for our guts. Oats are also a fantastic source of antioxidants. They contain polyphenols, which its subcategory of antioxidants called “avenanthramides”. This specific type of polyphenols is almost exclusively found in oats. It has been shown to reduce oxidative stress by increasing the production of nitric oxide gas in the body. Nitric oxide helps to dilate the blood vessels, which in turn, increases blood flow. This type of antioxidant is also great from an anti-inflammatory standpoint.

Easy Swaps and Questions

Can I use instant oats or steel-cut oats for this recipe? You could use instant oats, but they tend to be very mushy, and your overnight oat texture will likely resemble more of a pudding than oats. Steel-cut oats are too coarse for overnight oats and will likely make the recipe chewy and hard. I recommend rolled oats, which will still provide you with texture without making the recipe chewy.

Can I heat overnight oats in the morning? Yes, you can absolutely heat overnight oats in the morning. Just be careful how. If you are adding them to a microwave, transfer to a microwave-safe dish, and heat in 30-second intervals, stirring between each and potentially adding a splash of milk in order to give them some moisture. They should be done on the 1-minute to 1 + 1/2-minute mark. If you are heating them on a stovetop, be sure to also add a splash of liquid to loosen up, heat on medium heat and stir constantly.

I don’t want to heat my overnight oats cold, but I also do not want to heat them. Simply take your overnight oats out of the fridge about 30 minutes before consuming. You can also add some heated toppings, for example some warmed up raspberries.,

How to adjust this recipe to your individual dietary requirements

This recipe is gluten-free, vegetarian, and nut-free. If you want to make it vegan (and thereby also dairy-free), use a vegan protein powder, a vegan yogurt, and replace the buttermilk by creating your own with 1 cup non-dairy-free milk and 1 tablespoon of apple cider vinegar or lemon juice. Simply let sit for about 10 minutes
