Mini Apple Quark Balls

Funny enough, this recipe is one my sister brought to me. She left me a rather long voice note, detailing the recipe and how easy it was to make, yet how delicious it was. Then my five year old niece called me, in order to tell me that they made these Mini Apple Quark Balls and how delicious and easy they were. So, I took their initial recipe and adjusted it a bit, mainly to make it gluten-free. These balls taste greatly of quark and have subtle hints and notes from the apples. They are slightly crumbly when eaten and can absolutely be enjoyed with some ice cream on top!

Why Apple Are Good For You

Apples are high in fiber, which is absolutely amazing for our gut health. Said fiber may also contribute positively to our heart health as apples have been shown to lower our blood pressure. Apples also contain quite a lot of vitamin C, copper, potassium, and some vitamin K. They aren rich in an antioxidant called “polyphenols”. Most of the fiber and polyphenols sit in or directly underneath the skin. Antioxidants counteract free radicals. Too many free radicals can lead to oxidative stress. Oxidative stress is associated with most Western diseases – from Alzheimer’s to dementia, heart disease, etc. so combating this is highly welcome and needed. Last but not least, apples have been positively linked to a reduction in type 2 diabetes. In fact, the regular consumption of apples is linked to a reduction in risk of type 2 diabetes by ca. 18%.

Easy Swaps and Questions

I cannot find quark, can I use something else? Yes, you can absolutely use a thick Greek yoghurt, the mini apple quark balls may be less dense though.

I do not have almond flour and am not gluten-free. Could I use regular flour? Yes, you can. However, almond flour is a lot denser than regular flour, so I would increase the amount to 150 gram.

Can I freeze these mini apple quark balls? I would not recommend freezing these. They are best enjoyed freshly made and really, they take little time to make, so you should be good to go!

How to adjust these Mini Apple Quark Balls to your individual dietary requirements

This recipe is vegetarian, gluten-free, and nut-free. Due to the quark and egg used, it is sadly not suited for vegans.

These Mini Apple Quark Balls are quickly made and super delicious. Slight sweetness meets hints of cinnamon and quark. Enjoy!

Ingredients

  • For the Mini Apple Quark Balls
  • 2 apples

  • 250 gr. quark or Greek yogurt

  • 1/4 cup (60 gr.) xylitol

  • 1 egg

  • 1 cup (120 gr.) almond flour

  • 3 tbsp oil (I used olive oil)

  • 3/4 tsp cinnamon

  • 1/2 tsp vanilla powder

  • 1/2 tsp baking powder

  • For the topping
  • 1/2 tbsp xylitol

  • 1 tsp cinnamon

How to

  • For the Mini Apple Quark Balls
  • Preheat your oven to 200 degrees Celsius (400 Fahrenheit) to top and bottom heat. Line a baking tray with parchment paper
  • Wash the apples and core them. In a food processor, or with a grater, grate them coarsley. If you have neither, you could also finely chop them. Depending on the preference, you can peel them prior but personally I don’t
  • In a bowl, add the grated apples, quark or Greek yorgurt, xylitol, egg, almond flour, oil, vanilla powder, cinnamon, and baking powder. Mix well until combined. Portion out onto the baking tray, I used an ice cream scoop to divide the apple pie mixture
  • For the topping
  • Mix the xylitol with the cinnamon and sprinkle on top. Bake in the oven for 30 minutes or so until golden on top. Let cool completely before eating. Enjoy alone or with some additional ice cream on top!
