You guys – I told you the peach “spam” is not over for this season 😍. Allow me to introduce you to these gorgeous Mini Peach Cobblers. This is a dessert that comes together in minutes and only needs to be popped into the oven in order to turn beautiful (and messy 🤣). In the summertime, this means the best of both worlds: Eating seasonal, delicious produce, and not needing to spend hours on end in the kitchen.

What is a cobbler you might be asking? I have to admit that I was slightly confused about this myself… basically, you bask seasonal fruit in batter and then pop it into the oven. In comparison to a crumble, the batter works itself kind of through the entire fruit layer and does not just stay “crumbled” on top. I kind of thought of it like pancake batter that you add to your fruit and then bake. I feel that describes it kind of best (to me at least 😉).

Why have I made these in a miniature version you might be asking? Usually, cobblers come in large, shallow baking dishes. Sometimes you just want something quick and cutting and slicing loads and loads of peaches (in this case) is not my understanding of “quick” – LOL. However, if you wanted to you could likely spruce this one up and make it into a larger form – simply adjust the recipe setting to about 10 – 12 servings (and reduce the baking powder to about 3 teaspoons).

I feel like I have just written about Peaches before, but they are a beautiful, stunning, and simply delicious fruit – so I do not mind covering them again 😉. Peaches are high in Vitamin C. Vitamin C has so many amazing health benefits for our bodies – you know I can go on and on about this mighty vitamin. It is an antioxidant in its own right and fights off free radicals. It also supports our immune system and keeps us healthy. Another great benefit of vitamin C is that it aids in the production of collagen. Collagen is one of the most abundant proteins in our bodies and, amongst others, responsible for structural components of our skin. Long (nutritional) story short – basically it helps you to look younger for longer.

Peaches are also stock-full of dietary fiber. Fiber is so beneficial for our health and something that is getting a lot more airtime in the last couple of years. I find the entire topic so fascinating that I have written an entire blog post on it 😉. Peaches also contain super healthy amounts of an antioxidant called “beta-carotene”. This antioxidant is transferred into vitamin A in the body. Vitamin A has many amazing health benefits (all vitamins do!!) but amongst others, it is great for our eyesight and can protect us from degenerative diseases.

How can I adjust these Mini Peach Cobblers to my dietary requirements?
These Mini Peach Cobblers are vegetarian, vegan, refined sugar-free, and nut-free (be sure to use nut-free dairy-free milk). If you would like to make them paleo (and you are eating sweet as part of your paleo lifestyle), I would recommend swapping the sorghum flour for almond flour and using a paleo-approved baking powder.
