My Dog’s Birthday Breakfast Pancakes

It has been a while since I posted a pancake recipe but today it is an (adorable) special one – one that you can share with your pooched loved one. I made these pancakes for my beloved doggo last year. They are made with all natural ingredients and unless you dog has an allergy, they should be more than happy with this special treat. But if you do not have a pooch – fear not. These gluten-free, slightly sweet (from the banana) pancakes are also a great staple in the morning for you and your human loved ones. Let’s dive into My Dog’s Birthday Breakfast Pancakes.

How to Make an Excellent Pancake

Anyone who has done pancakes before knows that usually the first one goes down the drain and does not turn out well. I will share my ultimate secrets with you in order to turn out an excellent pancake – every time! The key to a good pancake is: (1) Use a non-stick pan. (2) Do not heat the pan too hot. Wait and only heat it to a medium flame. (3) Add your cooking oil once the pan is hot only and not prior. Also, only use a tiny amount. I am not sure why but it makes a difference. (4) Exercise patience. Let the pancake start to form little bubbles at the top before attempting to flip. That way the bottom is not still soggy and difficult to get on a spatula.

Why My Dog’s Birthday Breakfast Pancakes are Good for You

I know these pancakes are meant for your pooch, but since they can also be enjoyed by humans, I wanted to focus on that. I have not raved about oats in a short while… so here we go. Oats are a gluten-free wholegrain, which is anti-inflammatory and oftentimes used as a breakfast in the form of porridge. But it can also be ground into a flour and thereby serves as an excellent gluten-free flour alternative. Oats are high in manganese, phosphorous, magnesium, copper, iron, and zinc. They also contain folate, as well as vitamins B1 and B5, as well as quite a bit of protein. Oats are high in fiber and an antioxidant called “avenanthramides”. This specific type of polyphenol has been shown to reduce oxidative stress by increasing the production of nitric oxide in our bodies. Nitric oxide helps dilate our blood vessels for optimal blood flow.

Easy Swaps and Questions

Do I need to buy certified gluten-free oats? If you are celiac, be sure to buy certified gluten-free oats, as oftentimes oats are processed in the same factories as wheat and there may be some cross-contamination. However, if you are not celiac, you should be more than fine. Oats are naturally gluten-free already.

Can I swap the egg for a vegan alternative? I have no doubt that this recipe will work just as well with a chia or flax seed egg. Simply grind 1 tbsp of either in a small blender or coffee grinder and mix it with 3 tbsp of lukewarm water to create a “vegan egg”.

Can I batch cook the recipe in order to have some additional pancakes at hand during the week? You absolutely can do that. In order to store the pancakes, be sure to let them cool completely, before stacking them. Add a parchment paper or similar between each pancake, so that they do not stick together before storing them in an airtight container. You can also freeze them in the same fashion, whilst wrapping tightly. Re-heat them by popping them on the stove, in the microwave, or the toaster.

How to adjust this recipe to your individual dietary requirements

This recipe is vegetarian and gluten-free. If you want to make this recipe dairy-free and vegan, you could swap the egg for a chia egg by grinding 1 tbsp of chia seeds and mixing it with 3 tbsp of water. Due to the peanut butter used, this recipe is not nut-free.

My Dog’s Birthday Breakfast Pancakes are a perfect doggy treat but can also be enjoyed by humans. Easy and delicious – enjoy!

Ingredients

  • 160 gr. (1 + 3/4 cup) oats

  • 1.5 bananas

  • 1/2 cup water (or more to stretch)

  • 1 egg

  • 2 tbsp peanut butter (all natural, no sugar)

  • 1 tbsp olive oil

  • 1.5 tsp baking powder

  • Frying oil of choice

How to

  • Add the oats, banana, egg, peanut butter, olive oil, baking powder, and water to a high speed blender and blend until smooth
  • In a non-sticking pan, add a small amount of your frying oil of choice (I used ghee, but olive oil should also work well; check other oils if you are sharing with your dog) and let heat. Once the pan is medium hot, add the pancake batter. Let fry off of one side until small bubbles have formed before flipping to the other side
  • Serve with some extra sliced bananas and peanut butter on top (or some bacon slices for your pooch). Enjoy!
