Hearty Vegan Pizza Soup Bowl

I have to admit, I did not know about pizza soup. Did not even know it was a thing until we were served one at a get-together with friends a few weeks ago. And what can I say? I absolutely fell in love. It is super delicious, it is quickly made, it combines all the flavors of a pizza in a nourishing format (and is a bit lighter on the carb side – not that they are “bad” or the “enemy”), and can kind of be topped to your heart’s content. What more can a girl want? I tried to combine and nail all of the delicious flavors in my version with this Hearty Vegan Pizza Soup Bowl.

How to “Customize” Your Pizza Soup

The base recipe combines a ground vegan minced meat alternative with chopped onion, garlic, peppers, mushrooms, and corn, rendered down in a tomato broth. Here are additional ways and options to customize your Hearty Vegan Pizza Soup Bowl:

  • Make it spicy by adding in jalapeΓ±os
  • Add some cheese on top (if you are dairy-free, use a vegan cheese alternative or for that cheesy flavor, you can also add in some nutritional yeast)
  • Add salami, sausage, or chorizo. Obviously your pizza soup is then no longer vegan, but it becomes even more like your favorite pizza (if that is what you enjoy)
  • A dollop of sour creme should add a really nice, tangy, flavor profile

Why this Hearty Vegan Pizza Soup Bowl is Super Good for Us

This recipe is loaded with veggies, from tomatoes over peppers to mushrooms. Peppers are super high in vitamin C. Vitamin C plays a key role in keeping up a healthy and functioning immune system. They are also an antioxidant, which protects our bodies against free radicals. In addition, peppers are high in beta carotene, which gets converted into vitamin A in our bodies. Vitamin A is great for our eye health and may protect our eyes from degenerative diseases.

Although technically a fungus, mushrooms are a great source of vitamin D. Research studies have linked an increased intake of mushrooms to a reduction in mild cognitive impairment, which may pose a link between mushrooms and a reduction in cellular damage. For that same reason, mushrooms have also been linked to a reduced risk in cancer. In addition, they promote the growth of healthy gut bacteria, which by now we know is so important as over 80% of our immune system resides in our guts.

Easy Swaps and Questions

What kind of vegan “minced meat” are you using? I found one in our local health store that is solely made of pea protein and a little bit of jackfruit, yet provides amazing flavor. I tend to shy away from working with meat “alternatives” as usually they contain a lot of fillers or soy which may not be tolerated by everyone. If you would like to make your own minced meat, you can make my Rich Walnut Ragu and use that as a base instead. Alternatively, Pinch of Yum also has a vegetarian minced meat option in her Vegetarian Chili recipe.

Can I swap in minced meat instead of a vegan version? Of course you can. My recipes are always done in a way that you can easily swap ingredients in and out so that you can style the recipes to you and the ones you cook for dietary preferences.

Can I add some additional ingredients? Absolutely! If you are already cooking them with the soup, be sure to add enough water or accept that your soup will be slightly thicker. If you are adding them on afterwards, feel free to top your soup to your heart’s content. I have provided some great examples above.

This Hearty Vegan Pizza Soup Bowl is your perfect go-to when you are craving something warm and pizza at the same time. Delicious!

Ingredients

  • 1 white onion

  • 2 cloves garlic

  • 2 tsp olive oil

  • 250 gr. vegan minced meat alternative – see notes*

  • 1 tbsp tomato paste

  • 3 tbsp Italian spices, e.g. oregano

  • 1 red pepper

  • 250 gr. mushrooms

  • 1 can (300 gr.) corn

  • 1 can (400 gr.) chopped tomatoes

  • 2 tsp vegetable stock

  • Salt and pepper to taste

How to

  • Peel and chop both the onion and garlic. In a non-sticking pot, heat the olive oil to medium heat and add both the chopped garlic and onion with a pinch of salt. Fry off until translucent, about 8-10 minutes
  • Meanwhile, prepare your vegan minced meat (usually has to soak in water). Wash and chop the mushrooms into quarters. Wash and finely chop the pepper
  • Add the minced meat to the pot and fry off (you can increase the heat here). Add the tomato paste and Italian spices and let cook until fragrant, for about 2 minutes. Finally, add the peppers, mushrooms, corn, and chopped tomatoes. Refil the chopped tomatoes tin twice with water and add along as well. Lastly, add the vegetable stock. Bring to a boil and then reduce to a simmer for ca. 20 minutes or so. Do a final taste test and add salt and pepper
  • Serve with cheese on top, or whatever your heart contents from a pizza perspective. Enjoy!
