It has been a minute since my last recipe (and post for that matter). I needed some time to refocus, re-energize, and re-establish my motivation. But – I am back. And in this first post, I want to provide you with the recipe that I have been making on repeat for the last few months. These quick Five Minute Mini Cheesecakes are the perfect little treat and can satisfy any sweet tooth in seconds.

I created this recipe when I was craving cheesecake but was not in the mood for all the fuss of making a “full” one. These little fellas are perfect in size, and are so easy to whip up. You likely already have all of the ingredients in your fridge and pantry. My friends always make fun of me and tell me I am the queen of five minute recipes. Trust me on this one, you could not be quicker in and out of the kitchen!

Whether you are hosting a dinner party or simply craving something sweet – these ones are awesome. Be sure to play with the flavor – you could make it New York style (no fruits added), add other fruits than raspberries, or add some chocolate chips. These ones can be made time and time again, always ensuring that you have a new flavor combination. You could even add some savory ingredients, similar to a quiche (be sure to leave out the coconut sugar then).

Why are these Five Minute Mini Cheesecakes good for you?
Let’s be real, this is a sweet treat (a blissful, quick and easy one!!), so we should treat is as such. Why are these Five Minute Mini Cheesecakes good for you though (or better than some commercial treats)?
- Quark is high in protein, calcium, and vitamin A, B12, and K. Those three vitamins are especially beneficial for your vision, immune system, a healthy nervous system, bone health, and blood clotting abilities
- Eggs are high in protein, mono unsaturated fatty acids, vitamin D, vitamin B12, and a range of micronutrients, such as selenium and iodine
- Raspberries are high in vitamin C, quercetin (which is great for our immune system), and a range of other beneficial antioxidants that help to fight free radicals in our bodies, and thereby reduce both inflammation, and oxidative stress

How can I adjust this recipe to my dietary requirements?
This recipe is vegetarian, gluten-free, and nut-free. Be sure to use gluten-free pudding powder. You can also swap the pudding powder for 20 gr. of tapioca starch and 1 tsp of pure vanilla powder.
