I have to admit that the concept of avocado in a pasta recipe was completely new to me until about a week ago, when we were at our friend’s place and she served a similar version to this for dinner. I was immediately hooked. Think pesto flavors meet creaminess, meet kind of a guacamole feel, meet absolute deliciousness. We all devoured it and I immediately knew, that I had to create my own Creamy Avocado Pasta Recipe.

Tips to Make this Creamy Avocado Pasta Recipe Perfect

This recipe could not be easier but there are a few things I would consider. First off, do not choose a casserole dish that is too large. You want to the tomatoes to fill out the entire bottom. Add the pasta on top and pour enough boiling water on top, so that the pasta is barely covered. Do not use too much water, as else your sauce might become too “liquidy”. Also, do ensure that you are taking the lid off and let some of that pasta water evaporate before using it to help the sauce along. Other than that, this recipe is super easy to make and you will have a handle on it in no time.

Why is this Creamy Avocado Pasta Recipe Good for You?

This recipe is good on so many levels for you! First of chickpea pasta is not only gluten-free and cooks quicker than glutenous pasta, it is also higher in fiber and protein. The added tofu also adds a great dose of protein, allowing you to feel fuller for longer. Avocado is high in so many vitamins and minerals. Amongst others, it is high in vitamin C, E, K, as well as magnesium, potassium, copper, and manganese. All of these are great, amongst others for both your immune system, and your skin and bone health. They are also anti-inflammatory and an antioxidant. Avocado is also high in fiber. Fiber is super essential for our gut health, ensuring that our gut microbiome has enough healthy feeding ground and can thrive. All in all, this meal will provide you with a really great balance of protein, fiber, and micronutrients, of course whilst being delicious at the same time!

Easy Swaps and Questions

I cannot find nutritional yeast. What can I substitute it for? If you are not vegan, you can swap in parmesan super easily. Nutritional yeast is meant to provide that slightly cheesy flavor, which makes the recipe so delicious.

Can I swap the chickpea pasta for a different kind of pasta? Yes you can. I chose chickpea pasta because I personally like the taste and it comes very close to pasta containing gluten. I also like that it contains quite a bit of protein and fiber, which keeps you both full and satiated. Just be sure to adjust the cooking time for a bit longer, depending on which pasta you are using.

What if I do not like tofu? You cannot really taste the tofu in this dish, but if you are completely opposed to tofu, you could swap in a second avocado to create that same desired rate of liquids vs. solid ingredients.

This Creamy Avocado Pasta Recipe is super rich in nutrients, quickly made, and keeps you full for hours. An ideal mid-week cooking!

Ingredients

  • For the Pasta
  • 250 gr. cherry tomatoes

  • 200 gr. chickpea fussili

  • 1 tbsp olive oil

  • For the Creamy Avocado Sauce
  • 1 ripe avocado

  • 2 large cloves garlic

  • 2 large handfuls of basil

  • 1 block firm tofu

  • 1 lemon

  • 1/3 cup (67 gr.) nutritional yeast

  • Salt and pepper to taste

How to

  • For the Pasta
  • Wash and half the cherry tomatoes. Add to a shallow casserole dish (be sure to not choose too large a size – the tomatoes should fill the bottom of the dish), drizzle with olive oil and salt and put on medium-high heat until you can hear the tomatoes “fizz” (meaning they are starting to fry). Add the pasta on top and cover with boiling water. Put the lid on 3 minutes or so and then take of the lid and let the pasta cook until al-dente, ca. 6 minutes in total. Set aside
  • For the Creamy Avocado Sauce
  • In a blender or food mixer, add the avocado, garlic, basil, tofu, lemon, and nutritional yeast. Set a collander on top of the blender or food mixer and add the remaining pasta water. Season with salt and pepper and blend until smooth. Do a taste test and adjust any of the flavorings to desire. If you feel that the sauce is too runny, you can either render it down whilst cooking, when combined with the pasta water or add a bit of starch, for example in the form of some almond flour (only if you are not nut-free). To serve, add the pasta and creamy sauce together, and mix super well. You can add some fresh tomatoes, arugula, basil, and/or sunflower seeds for serving. Enjoy!
