Grilled Peach Salad with Burrata

This Grilled Peach Salad with Burrata could not find its way to you any faster! I was attending a friend’s christening a couple of weeks ago, and the celebration took place at a restaurant. We walked in and the first thing on the menu said “Grilled Peach with Burrata”. We were all super keen on it, but our friends had organized a set menu, which albeit also super delicious, did not include this dish.

I cannot tell you how much of an itch I had the entire time being there and then driving home. I could not get the idea of peach and burrata out of my head. I could envision this embedded in a salad that has notes of warm, cold, peppery, slight spice, softness, sweetness, and great texture. In fact I made my friends google recipes on the way home and read them to me for further inspiration. I dropped them off and drove straight to the supermarket, and made this salad that night for dinner. It was an instant hit, and by god – this is so darn delicious. True story – but with a fantastic salad coming in at the end.

What Pairs Well With Peach and Burrata?

Peach and burrata are a match made in heaven! Creamy, sweet, and fresh – this is everything, especially when you are pairing it with other ingredients that contrast and complement these two ingredients. Savory and salty work well, fresh herbs and greens, and a lovely dressing, which can also go either lemony or slightly sweet through a balsamic drizzle, or honey

Why Is This Grilled Peach Salad With Burrata Good For You?

Peaches – fuzzy peel and white or yellow flesh. They are not only absolutely delicious but also nutritious and offer an array of health benefits. Peaches are high in fiber, vitamin C, A, potassium, and copper. Most of these vitamins and minerals sit under the skin of the peach. That is also the reason why canned peaches and fresh peaches offer similar antioxidant benefits.

Peaches are also high in antioxidants, which combat oxidative stress and support your body in fighting aging diseases. The fiber in peaches may support healthy digestion, whilst providing a feeding ground for your good gut bacteria. One nice little last “tid bit” – peaches have been shown in test tube studies to retain moisture in your skin, thereby improving skin structure. How cool is that?!

Easy Swaps and Questions

Can I use nectarines or other stone fruits for this salad? Yes, you can likely swap this out. The flavor profile may be slightly different, but overall it will be similar enough in order to give the salad the same notes and textures.

Can I substitute burrata with mozzarella or other cheese? Yes, you likely can, but the burrata has the additional benefits of slightly “oozing” and providing additional creaminess. You will not get the same texture profile by adding another cheese. But it will be equally delicious.

How do I prevent this salad from going soggy? You will have to keep the ingredients separate. Keep the sauce on the side and do not add the grilled peaches to the salad. The other ingredients can be mixed in advance. This principal would also apply if you are meal prepping parts of this salad in advance.

How to adjust this recipe to your individual dietary requirements

This Grilled Peach Salad with Burrata is vegetarian and gluten-free. You can easily make it vegan and dairy-free by not using burrata but a vegan cheese. You can also make this recipe nut-free by swapping the walnuts for sunflower seeds.

This Grilled Peach Salad with Burrata combines creaminess, freshness, and notes of sweetness with loads and loads texture. Enjoy!!

Ingredients

  • For the dressing
  • 3/4 cup balsamic vinegar

  • 1 tbsp olive oil

  • For the Grilled Peach and Burrata Salad
  • A little olive oil for frying

  • 1 medium -sized courgette

  • 4 peaches

  • 1 tsp liquid vanilla

  • 200 gr. cherry tomatoes

  • 125 gr. rocket

  • 50 gr. walnuts

  • Large handful of basil

  • 4 burratas

How to

  • For the dressing
  • Add the 3/4 cup balsamic vinegar to a pan and set on medium heat. Let reduce to about half the amount. Your balsamic glaze should be sticky. Add the olive oil and set aside when done
  • For the Grilled Peach and Burrata Salad
  • Meanwhile, wash and cut the courgette into small, bite-sized pieces. Heat a non-sticking pan to medium-high heat. Add a little olive oil (or cooking oil of choice) and the courgette. Season with pepper and cook, stirring occasionally
  • Whilst the courgette is cooking, wash and de-seed the peaches. Cut into thin stripes. Once the courgette is done, take out of the pan and add the peaches. Let cook until slightly browning, and turning soft. Add the liquid vanilla for some additional sweetness. Take off heat when done
  • Whilst the courgette and peaches are frying, wash and cut the cherry tomatoes in half. Wash the rocket, and roughly chop the basil. Chop the walnuts and add everything to a salad bowl
  • When all the ingredients are prepared, add the courgette, peaches, and balsamic glaze dressing to the salad bowl. Mix everything through and serve on a big platter with the burratas served on top. Alternatively, you can do the “nice” presentation style I have done for the pictures and prepare every plate separately. Serve immediately and enjoy!!
