This Easiest Yummy Chickpea Salad will change your summer salad routine for the good 😍. I ate this salad in a canteen and it was so good, I immediately knew that I had to re-create it 🙌🏻. You will not be disappointed by this delicious addition to your summer salads.

This salad has everything – a little kick from the cayenne, pungent notes from the spring onions, sweetness from the veggies and mint, and sour notes from the lemon juice. Both your satisfied belly and taste buds will thank you. What is more – all the fiber and protein from the chickpeas and veggies will keep you super full and satisfied 😉. It is a totally delicious win-win!

As always, this salad comes together in no time. You simply have to cut the veggies, and drain the chickpeas (extra bonus points if you are soaking and cooking them yourself… but truthfully, this does not happen in my kitchen 🤪), add the ingredients for the dressing, and then mix. I like to make this salad in advance and keep it in the fridge for a couple of hours so that all the flavors can marinate.

Also called “garbanzo beans”, chickpeas are an excellent source of manganese, folate, copper, phosphorous, iron, and zinc. Chickpeas are also a great source of plant-based protein. In addition, they are stock-full of fiber – both the insoluble and soluble kinds. The insoluble fiber passes all the way through our digestive tract. In our large intestine, this type of fiber can be broken down by bacteria into short-chain fatty acids (SCFA). These SCFAs line and protect our colon wall and provide energy to our cells. This activity allows our colon to stay especially strong and healthy (and remember, this also then translates directly to our immune system, which resides to over 80% on our gut). Fiber is also known for blood fat regulation – lowering “bad” cholesterol levels, total cholesterol levels, and triglycerides.

As we know, antioxidants protect us from free radicals in our bodies and combat oxidative stress, which is a common contributor to Western diseases. Last but not least, I want to point out chickpeas’ benefits in relation to heart health. I have already mentioned the lowering of blood fat regulation above, which is highly supportive of our heart health. Soluble fiber has also been linked to a healthy heart. In addition, the antioxidants found in chickpeas support our blood vessels and walls. Overall – not too bad for the small, mighty, chickpea – am I right?!
