This salad has everything – a little kick from the cayenne, pungent notes from the spring onions, sweetness from the veggies and mint, and sour notes from the lemon juice. Both your satisfied belly and taste buds will thank you. What is more – all the fiber and protein from the chickpeas and veggies will keep you super full and satisfied 😉. It is a totally delicious win-win!

As always, this salad comes together in no time. You simply have to cut the veggies, and drain the chickpeas (extra bonus points if you are soaking and cooking them yourself… but truthfully, this does not happen in my kitchen 🤪), add the ingredients for the dressing, and then mix. I like to make this salad in advance and keep it in the fridge for a couple of hours so that all the flavors can marinate.

Why is the Easiest Yummy Chickpea Salad good for you?

Chickpeas

Also called “garbanzo beans”, chickpeas are an excellent source of manganese, folate, copper, phosphorous, iron, and zinc. Chickpeas are also a great source of plant-based protein. In addition, they are stock-full of fiber – both the insoluble and soluble kinds. The insoluble fiber passes all the way through our digestive tract. In our large intestine, this type of fiber can be broken down by bacteria into short-chain fatty acids (SCFA). These SCFAs line and protect our colon wall and provide energy to our cells. This activity allows our colon to stay especially strong and healthy (and remember, this also then translates directly to our immune system, which resides to over 80% on our gut). Fiber is also known for blood fat regulation – lowering “bad” cholesterol levels, total cholesterol levels, and triglycerides.

Chickpeas contain, of course, also a range of unique antioxidants. As we know, antioxidants protect us from free radicals in our bodies and combat oxidative stress, which is a common contributor to Western diseases. Last but not least, I want to point out chickpeas’ benefits in relation to heart health. I have already mentioned the lowering of blood fat regulation above, which is highly supportive of our heart health. Soluble fiber has also been linked to a healthy heart. In addition, the antioxidants found in chickpeas support our blood vessels and walls. Overall – not too bad for the small, mighty, chickpea – am I right?!

This Easiest Yummy Chickpea Salad is a flavorful dream come true. Chickpeas, veggies, and the yummiest dressing make a salad to enjoy!

Ingredients

  • For the salad
  • 700 gr. 700 chickpeas

  • 1 small 1 red pepper

  • 250 gr. 250 cherry tomatoes

  • 1/2 1/2 cucumber

  • 2 2 stalks of spring onions

  • A handful of mint leaves

  • For the dressing
  • 4 tbsp 4 olive oil

  • 3 tbsp 3 lemon juice

  • 3/4 tsp 3/4 salt (or to taste)

  • 1/2 tsp 1/2 turmeric

  • A bit of cayenne (optional)

  • Pepper to taste

How to

  • For the salad
  • Wash the chickpeas and gently shake to dry. Add to a large salad bowl. Wash and finely cut the red pepper, tomatoes, cucumber, spring onions, and mint leaves. Add along to the bowl
  • For the dressing
  • Add the olive oil, lemon juice, salt, turmeric, cayenne, and pepper to a bowl and mix. Pour the dressing on the salad and mix everything through. Do a final taste test and make final adjustments. This salad can be served straight away or put into the fridge for a minimum of an hour to have the flavors marinade. Eat as a starter, bring along to a BBQ, or eat with your favorite protein. Enjoy!!
