I know what you are thinking: Sweet Potato Ice Cream? But this is one of the easiest, creamiest, delicious desserts. Limited time in the kitchen = more time to entertain and spend time with your loved ones and guests. It’s a complete win-win in my opinion 🥰️.

Ice cream can be a tricky candidate for creation at home? Why because in coldness first of all the taste of sweetness greatly fades. So even if something does taste sweet at room temperature this does not mean that it will still taste sweet when cold. So you tend to need to add more sweetness in order to feel that it tastes “oversweet” .

The other tricky candidate is the addition of spices. Sometimes they can taste far too mellow, sometimes a little further addition can be a bit overpowering. Sweet potatoes are (as the name might suggest) a sweet root vegetable. They are grown all over the world and can come in different colors, usually white, orange, and purple. Sweet potatoes contain quite a bit of fiber, along with abundant amounts of vitamin A, C, and B6, along with manganese, potassium, and copper. The orange and purple sweet potato variety are also high in antioxidants. Vitamin A is so vital for our bodies and immune system. It, for example, protects our mucous membranes, particularly those around the gut lining. Vitamin A has also been linked to combating degenerative eye diseases and supports healthy vision.

Dietary fiber is so important and valuable for our digestive tract. Studies have shown that adequate amounts of fiber can lower your risk of colon cancer. In addition, test-tube studies have found that certain antioxidants in sweet potatoes promote healthy gut bacteria and may be associated with better gut health. Anthocyanins, which is a certain form of antioxidant found in the purple variety, may slow down the growth of certain types of cancer cells. The same antioxidants have also been to be particularly beneficial for the brain by lowering inflammation. Quite impressive for a “simple” dessert – am I right 😋?!
